16 oz. wild salmon filets
1 tsp. oil
1/3 c. diced shallots or sweet onion
I c. kale, chopped
Coarsely ground salt & pepper
3/4 c. quinoa, cooked
2 T. Dijon mustard
1/2 tsp. Old Bay Seasoning
1 large egg, beaten

Directions:
Cut off approximately 4 oz. piece of salmon and place in a food processor to finely chop. This will hold the burgers together.

With a knife, finely chop remaining salmon and transfer to a large work bowl.

Heat a large non-stick frying pan over medium heat, add the oil and sauté shallots and kale.Season with salt and pepper and cook over medium heat until wilted and tender, about 4-5 minutes, or until cooked through.

Transfer to the bow with salmon aong with quinoa, Dijon, Old Bay and egg. Mix to combine, then form into 5 patties, about 1/2 c. each.

Lightly heat a large non saick frying pan or grill pan. When hot, spray with oil and add salmon patties. Cook then 4-5 minutes then turn them and cook an additional 4-5 minutes or until cooked through.

Serve with salad.
