1 (10 oz) box frozen chopped broccoli or 1 head fresh broccoli
1 cup diced onion (optional)
1 (8 oz) jar Cheese Whiz
3⁄4 cup milk
2 cups cooked rice
1 (10 oz) can cream of mushroom soup
Substitute cream of chicken or celery soup if preferred
Salt and pepper

Directions:
Directions:
If using fresh broccoli, cook broccoli to desired tenderness. Sauté onion in a bit of butter if desired. Stir together soup, cheese whiz, milk, and onion to cooked rice. Gently fold in broccoli and pour into a greased 2 quart casserole with lid.

Bake covered at 350ºF until warmed through and cheese is bubbly, generally 1/2 hour.
