Cream Pie

1/4 - Cup of Cornstarch
2/3 - Cup of Sugar
1/4 - Teaspoon of Salt
2 - Cups of Milk
3 - Egg Yolks
2 - Tablespoons of Butter
1 - Teaspoon of Vanilla


Meringue

3 - Egg Whites
6 - Tablespoons of Sugar

Directions:
Directions:
1. Fill the double boiler with water on the bottom and wait until it is at a full boil.
2. Once boiling, combine the cornstarch, sugar, salt, and the milk gradually into the top pan.
3. Cook until the mixture is thick - (Approximately 10 minutes)
4. Take the egg yolks and beat them in a separate dish.
5. Blend a small amount of the cream mixture into the egg yolks.
6. Add into the mixture the vanilla and butter and continue stirring.
7. Add the egg mixture slowly into the cream mixture ensuring you are stirring constantly.
8. Add 3 Tablespoons of the egg white mixture into the cream mixture and mix.
9. Pour the cream mixture into a pie crust.
10. Take the remaining egg whites and use an electric mixer to beat them
11. Gradually add the sugar and continue beating the egg whites until peaks begin to form.
12. Spread the meringue on the pie
13. Bake for 12 - 15 minutes at 350º.
