1 ½ cups minute rice, uncooked
1 can (540 ml) black beans (drained and rinsed)
1 can cream of chicken soup & 1 can water
¼ cup chopped cilantro (optional)
4 small boneless skinless chicken breast halves (approx. 1 lb)
½ cup salsa
2 cups tex mex shredded cheese

Directions:

Preheat: 400ºF

Mix rice and beans in 9x13 pan. Combine soup, water, cilantro – pour evenly over mixture. Top with chicken, then spoon 2 tbsp of salsa over each chicken breast.
Bake 35 minutes, sprinkle with cheese, bake 10 minutes more or until cheese melts.
