"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 tsp sea salt/ Sal
1 Cup of warm water +2 tsp if needed/ Taza de agua tibia mas 2 cucharadas si son necesarias

Seasonings:1 tsp each of onion and garlic powder

Directions:
Directions:
Mix all ingredients in a bowl and cover with moistened kitchen towel let it sit between 30- 60 minutes After the 30-60 minutes mix by hand and shape into a roll and cut out dough into desired amounts of tortillas or wraps.
Either roll out with a pin on a surface use almond flour if needed or use a silicone liner then cutout shape with a big or small saucepan lid or use a tortilla press. On a Med/high heat grease the pan or skillet place tortilla/wrap for 2-4 minutes then turn for an additional 1-2 minutes. Once tortillas are cooled put in a zip lock bag (I cover tortillas with a kitchen towel inside the bag). Will last for over a week. To heat up warm up in skillet or pan even microwave works well.
