1/4 C. Red Wine Vinegar
2 tbsp. Honey
2 tsp. Dijon Mustard
1/4 tsp. Salt
1/4 tsp. Ground Black Pepper
3/4 C. Extra Virgin Olive Oil
1/2 C. Feta Cheese in Brine- crumbled and drained
2 tbsp. fresh Parsley Leaves- chopped
1 tbsp. fresh Basil Leaves- chopped
2 tsp. fresh Oregano Leaves- chopped

Directions:
Directions:
In medium bowl (with whisk), stir vinegar, honey, mustard, salt and pepper until well blended. Whisking constantly and vigorously, very slowly drizzle oil into vinegar mixture until dressing is emulsified; stir in cheese and herbs.

Makes about 1½ cups. Its better to prepare and refrigerate in an airtight container up to 1 week in advance.
