1lb boneless skinless chicken breast
1 tbsp. of canola oil
2 cup quick cook rice, uncooked
4 eggs, cooked and scrambled
2 cup frozen peas and carrots
2 cups water
2 tbsp. lite soy sauce

Directions:
Directions:
cut chicken into bite size pieces and cook in oil in wok until cooked through and browned
Add water, rice, soy sauce, and veggies. Bring to a boil
reduce heat and simmer 5-7 min covered or until liquid is absorbed
stir in eggs and add soy sauce to taste if needed

* leave chicken out to make vegetarian
