2 tbsp. oil
1 cup uncooked rice
1 onion chopped
1/2 green pepper chopped
1 tsp salt
2 cups water
1(10oz) can diced tomatoes with chilies
2 tsp chili powder

Directions:
Directions:
sauté rice, onion and pepper in oil until rice is browned
stir in the rest of the ingredients and bring to a boil
reduce heat and simmer 30min or until rice is cooked and liquid is absorbed
