1 C. butter
1 C. light brown sugar
1 egg
1 1/2 C. sifted flour
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 1/4 C. quick cooking oats
1/2 C. finely crushed corn flakes
1 C. salted spanish peanuts

Directions:
Directions:
Cream butter and sugar.
Add egg: beat well.
Sift flour, baking soda and powder together.
Add to creamed mixture, blending well.
Mix in oats, corn flakes, and peanuts.
Roll into 1/4 inch balls, bake 350º for 15-20 minutes

One of the families favorite Christmas cookie: a less sweet, crunchy variation. Watch well to make sure they don't overbake.
