Sangria Base
4 large oranges
5 lemons
2 limes
3 lbs. granulated sugar
2½ quarts water

Sangria Drink
5 oz. Sangria Base
1 fifth Spanish red wine or California Burgundy
1 large orange
3 lemons
1 fresh peach
4 oz. Soda Water

Base
Cut all fruit into thick slices or wedges. Slow boil the equivalent of 2 oranges, 3 lemons and 2 limes in large pot with the water, adding sugar constantly as fast as it dissolves. Continue stirring and cooking until saturated with sugar and syrupy but stop when bitter taste (from the peels) begins. Mash and squeeze remaining pieces of orange and lemon in the hot syrup and let stand. Chill the Base before using. (It will keep indefinitely in a jar in the refrigerator.)

To make the drink.
Combine the Base, wine and ice in a large pitcher. Mix and then add in the Soda Water. Garnish with fruit.
