Ingredients: 1 Pound Mild Italian Sausage 1 1/4 Teaspoons Crushed Red Pepper Flakes 4 Slices Bacon, Cut into 1/2 inch Peices 1 Large Onion, Diced 1 Tablespoon Minced Garlic 5 (13.75 ounce) Cans Chicken Broth 6 Potatoes, Thinly Sliced 1 Cup Heavy Cream 1/4 Bunch Fresh Spinach, Tough Stems Removed

Directions:Cook sausage & pepper flakes in Dutch oven over medium high heat until crumbly, browned & no longer pink, about 15 minutes. Drain & set aside.
Cook Bacon on in the same Dutch oven over medium heat until crisp, about 10 minutes. Remove bacon from pan leaving the drippings in the pan. Stir in the onion & garlic, cook until soft & translucent, about 5 minutes.
Pour the Chicken broth in to the Dutch oven with the onions & add back the bacon. Bring to a boil over High heat. Add the Potatoes, & boil until fork tender, about 20 minutes. Reduce the heat to medium & stir in the Heavy Cream & the cooked Sausage. Mix the Spinach into the soup just before serving. |

Notes: If there is a lot of grease from the bacon you may remove most of it. Cubed Cauliflower can be used instead of the potatoes for the ones cutting down on carbs. Kale can be used instead of the Spinach. For those that are sensitive to milk, almond milk or lactose free milk or other can be used.
