Ingredients:  
Ingredients:  
2 Tablespoons olive oil
2 leeks, sliced
2 zucchini, diced
2 cloves garlic,crushed
4 cups canned chopped tomatoes 🍅
1 Tablespoon of tomato 🍅 paste
1/2 teaspoon thyme
3-1/2 cups of vegetable broth
1 14-ounce can garbanzo beans, drained and rinsed
8 ounces fresh spinach

Directions:
Directions:
Heat oil in large pan; and leeks and zucchini and cook them briskly for 5 minutes, stirring constantly. Add garlic, tomatoes, tomato 🍅 paste, thyme, vegetable broth and garbanzo beans. bring soup 🍜 to a boil and simmer for 5 minutes. Add spinach and cook for 2 minutes. Season to taste.

Serve immediate with fresh grated Parmasan cheese 🧀 and warm crusty bread.
