1# boneless, uncooked pork cut in bite size pieces from the shoulder or loin
flour
2 eggs beaten
Fine cracker crumbs or bread crumbs
1 medium onion, cut in ½ across the grain, then cut into thin slices
2 cups water
¼ c soy sauce
2 Tblsp sugar or more to taste
Salt & pepper to taste

Place pork, a few pieces at a time in a plastic bag with a generous amount of flour.
Dip in beaten egg then in cracker crumbs.

Fry over medium heat in a small amount of oil until brown and crisp on all sides. Drain grease.

Add onion, water, soy sauce, sugar and salt and pepper.

Bring to a boil. Add pork.
Simmer uncovered approximately 40 minutes until the sauce is reduced and thickened to desired consistency.

Sere over hot rice.
