2 cups water
1 and 1/4 cups milk
1 tsp salt
1 cup quick grits

1/2 cup (1 stick) butter
1/3 cup diced green onions (sautéed in 1 Tbsp butter)
4 oz cubed Velveeta cheese
1/4 tsp garlic powder
1 and 1/2 cups shredded cheddar cheese
1 10 oz can diced Rotel tomatoes with green chillis

Directions:
Directions:
Cook grits in the water, milk and salt for 3 minutes.
Add the 1/2 cup of butter.
Cook 3-5 minutes more
Saute the onions in 1 Tbsp butter for 1 minute
Add the cubed Velveeta, garlic, and 1 and 1/3 cups of the cheddar cheese.
Add the onions and tomatoes to the pot and stir well until cheeses melt.

Pour into greased casserole.

Bake in 350º for about 40 minutes, sprinkling the 1 cup remaining cheddar cheese on top
during the last 5 minutes.

This is a wonderful easy, attractive casserole to add to a. hot meal.
Quite a contrast to the familiar grits recipe, which is bland.
