3 tomatoes, chopped
3 zucchini, chopped
2 potatoes, cubed
1 eggplant, cubed
1 handful green beans
1 onion, chopped
5 cloves garlic, minced
1/3 Cup Olive Oil
1 handful chopped basil
salt/pepper to taste
Parmesan, for garnishing
olives, for garnishing

Directions:
Directions:
Fill a pot with water, and boil potatoes until almost done. Do the same with the green beans.

Heat oil in large saute pan on medium. Add garlic and onion and saute until translucent. Add eggplant and saute until done. Add zucchini and cook for 5 min, stirring constantly. Add the rest of the vegetables and stir until done. Add salt and pepper and basil. Serve garnished with Parmesan and olives.

My in-laws from Naples call this Italian peasant food, you use whatever grew in your garden so there are lots of versions of this recipe through Southern Italy. They pronounce it "Sham-bot."
