2 c. corn
1 lb grape tomatoes
1 TB vinegar
1 tsp salt
15 oz. black beans (drained)
6 oz. southern style cornbread mix 1 egg
1 tsp. chili powder
olive. oil
cilantro (opt.)

Directions:
Directions:
Coarsely chop tomatoes. In a small sauce pan combine tomatoes, vinegar, salt, 1/2 c. water. Cook covered over med low heat. stirring occasionally. In a large bowel, mash beans with a fork, add corn, cornbread mix, egg, chili powder, 1/2 tsp salt, 1/2 c. water and stir. Scoop 1/4 c. mixture onto oiled skillet and make very thin. Cook 4 min. per side. Serve with warm tomato mixture.
