1/2 c. Buckwheat flour
1/2 c. Old­ fashion rolled oats 1/2 c. Cornmeal
1 tsp. baking powder
1/2 tsp. baking soda
1 ripe banana
2 T. Vinegar
3 T. Maple syrup(optional)
2 c. Almond milk

Directions:
Directions:
Mix buckwheat flour, oats, cornmeal, baking powder & baking soda in a bowl. Mash the banana in another bowl, & add vinegar, maple syrup, and milk. Stir and add to dry ingredients. Heat a nonstick pan on medium high. When water sizzles on the pan, its ready for the pancakes. Cook until bubbles form. Flip, cook another few minutes on the other side, and enjoy eating plain or with fruit or maple syrup.

If you like thicker pancakes, use less milk ( I use 1 3/4 C.) I also add 2 C. Blueberries and 1 C. Pecans. I make up the leftovers and freeze for later or you can make muffins. Just add some raisins and bake at 350 for 20 min.
