Mexican Cornbread Recipe

yellow cornmeal soda
salt
milk
cooking oil
eggs
1 can cream corn
1/2 lb. grated cheese
1/2 lbs ­ 1 lb browned ground meat 1 medium chopped onions
4 chopped jalapeños peppers

Directions:
Directions:
Preheat over to 350o Mix cornmeal, soda, salt, milk, eggs, cooking oil and corn. Set batter aside. Brown ground meat in skilled and drain on paper. Put 1/2 of batter in pan (9x13 or maybe a little smaller). Add cheese, beef, onions and peppers in layers in order given. Pour remaining batter on top of the layers. Bake 45 - 55 minute (or until cornbread is golden brown).

Sometime I use 1/2 lb ground meat and 1/4 pound sausage. This recipe is from an old country Baptist Church Recipe Book and it is the best Mexican Cornbread recipe I have found.
