c sugar
1 egg, beaten
⅔- c oil or shortening
11/2 c flour
2 tsp. baking powder
tsp. salt
1 tsp. vanilla or almond extract
1 c shredded carrots or cooked mashed carrots

Directions:
Directions:
Beat sugar and shortening until well mixed. Add beaten egg. Mix until light and fluffy. Add carrots. Combine together dry ingredients and add to carrot mixture. Drop on to cookie sheet lined with parchment paper. Bake at 350F for about 20 minutes or until nicely browned. Glaze, while warm, with orange or almond icing.

Orange Glaze:
c. marg.
1 tbsp. orange peel
2 tbsp. orange juice

Thicken with icing sugar, adding a little at a time until right consistency.

Marguerite Boucher is Grandpa Fradette's Aunt. I had these cookies while visiting her with Grandma Angela. They were so good that I had to get the recipe from her.
