1 envelope Knox gelatin
1/2 C cold water
2/3 C hot pineapple syrup
1/4 C sugar
1/4 tsp salt
1 T lemon juice
1/4 C mild or tarragon vinegar
1 C dices drained cucumber
1 C diced, drained pineapple
Directions:
Directions:
1. Soften gelatin. Add hot syrup, salt, lemon and vinegar. Chill until egg white consistency.

2. Add cucumber and pineapple. Pour into mold. Chill until firm.
