(2) 2 lb broilers cut up
3/4 cup flour
3 tsp paprika
3 tsp salt
3/4 tsp pepper
salad oil or shortening

Directions:
Directions:
In paper bag, mix flour, paprika, salt and pepper. Drop two or three pieces of chicken at a time into the bag. Shake until coated.
In large skillet, place 1/4 inch shortening. Heat until drop of water sizzles in it. Brown meaty pieces first. Uncover turning now and then as meaty pieces brown Slip in rest of chicken - when all chicken as browned, reduce heat and cook covered 20 to 25 minutes or until pieces are fork tender. Then uncover and heat 10 minutes to re-crisp chicken.

Soak chicken in salt water overnight or several hours before cooking. Drain and rinse then follow above directions.
