1 TSP. SODA
1 TSP. SALT
½ CUP CHOPPED NUTS
¾ CUP SUGAR
½ CUP SHORTENING
2 EGGS
2 RIPE MEDIUM BANANAS, MASHED

375º 2 LOAF PANS

SIFT FLOUR, THEN MEASURE. ADD SODA AND SALT TO FLOUR AND SIFT INTO MEDIUM MIXING BOWL. SET ASIDE.

CREAM SHORTENING AND SUGAR UNTIL FLUFFY. BEAT EGGS WITH ROTARY BEATER UNTIL FOAMY. ADD EGGS AND BANANAS TO SHORTENING AND SUGAR AND BLEND WITH WHISK. ADD FLOUR IN 3 ADDITIONS. MIX AFTER EACH ADDITION UNTIL BLENDED. POUR BATTER INTO PAN LINED WITH WAXED PAPER. BAKE FOR 60 TO 70 MINUTES OR UNTIL TOOTHPICK INSERTED IN CENTER COMES OUT CLEAN. REMOVE FROM OVEN. IMMEDIATELY LOOSEN BREAD FROM PAN WITH THIN SPATULA AND TURN BREAD ONTO COOLING RACK. IMMEDIATELY REMOVE WAXED PAPER. SAVE SOME FOR EVERYONE ELSE!!!

USE 4 ½ X 12” LOAF PAN OR REGULAR LOAF PAN. CUT WAXED PAPER TO FIT BOTTOM OF PAN. GREASE TOP OF PAPER AND PLACE IN PAN. DO NOT GREASE SIDES OF PAN.
