4 loin pork chops about 1 1/2 to 2" thick
vegetable oil
Pocket Stuffing:
1/4 c chopped onions
1/2 c mushrooms finely chopped
3 cloves garlic minced
1 tsp dried basil
1/2 c parsley chopped
1/2 tsp salt
1 c bread crumbs
1/4 c butter or margarine melted

Directions:
Directions:
Stir stuffing ingredients together in a small saucepan. Heat mixture gently enough to blend all together. Trim chops if necessary. Cut a pocket horizontally into the side of each chop along the rib bone. Fill pockets in chops with stuffing. Grill chops over low heat at highest grill setting. Turn occasionally. Barbecue the chops until the juices are no longer pink.

Note: Wrap up extra dressing in foil and bake slowly. To secure the stuffing, insert two toothpicks diagonally near border of fat so they cross at the centre of the opening.
