1 TBSP. GRATED LEMON PEEL
¼ CUP LEMON JUICE
1 ½ CUPS MILK
¼ CUP FLOUR
1 CUP SUGAR
1/8 TSP. SALT

325º 9X9 CAKE PAN OR 1 QUART CASSEROLE

PREHEAT OVEN. IN SMALL MIXING BOWL, BEAT EGG YOLKS. BLEND IN LEMON PEA, LEMON JUICE AND MILK. ADD FLOUR, SUGAR AND SALT; BEAT UNTIL SMOOTH. BEAT EGG WHITES UNTIL STIFF. WITH WHISK, FOLD IN YOLK MIXTURE GENTLY, BUT THOROUGHLY. POUR INTO GREASED 1 QUART CASSEROLE. SET IN ANOTHER PAN WITH ½” HOT WATER. BAKE 45 TO 50 MINUTES OR UNTIL GOLDEN BROWN.
