8 oz cream cheese (soften)
2½ cup cheddar cheese (grated)
1 teaspoon Dijon mustard
2 tablespoons half and half
¼ cup Guinness
2 or 3 scallions (chopped)
1 teaspoon garlic (minced)
2 tablespoons parsley ( chopped)
Salt and pepper to taste

Directions:
Directions:
* In blender or food processor, combine cheeses, mustard and half and half. Pulse until smooth.
* With food processor running slowly pour Guinness into the bowl, blend until combine.
* Add scallions, garlic, parsley and salt and pepper. Blend until throughly mixed.
* Transfer to a bowl, cover and chill for at least 1 hour before serving.
* Serve with crackers, pretzels or veggies
