Ingredients:  
Roma or enough tomatoes cut up to cover the bottom of a big cookie sheet, about 4c.
6 cloves garlic, minced
pepper and ½ to 1 tsp kosher salt
2 tbsp. olive oil

Directions:

Preheat oven to 375ºF

Toss together all ingredients. Transfer to a baking sheet and spread into an even layer. (I put them on parchment paper)

Bake for 20-25 minutes.

Use in pasta dishes, soups, stews, chili, spaghetti squash or just eat them as is. We really like them done this way. Also after they come out of the oven I have just let sauce cool and then put it into plastic containers and froze it. Then I pop out the frozen sauce of the container and into freezer bags until needed. Hope you like it as much as we do!! Enjoy!!
