8 c shredded zucchini
6 c onion, chopped
6 c green peppers, chopped
6 large jalapeno peppers, chopped
5 tbsp. salt

The night before, put all in a big bowl. Sprinkle salt on top. Drain off juice in the morning.

2 tsp minced garlic
2 tsp dry mustard
1 tsp nutmeg
2 tbsp. cornstarch
1 small can tomato paste
1 tsp pepper
1 tsp turmeric
1 tbsp. cumin
2 c white vinegar or 1¼ cider vinegar
14 c diced tomatoes

Drain zucchini and put in a large pot, add tomatoes. Mix up remaining ingredients and add to first mixture. Bring to a boil, simmer 45-60 minutes. Makes 24 c salsa. Prepare jars and boil 20 minutes.
