2 c finely diced unpeeled apples
½ c raisins
½ c chopped dates
2 eggs
⅓ c lighty packed brown sugar
½ c vegetable oil
1 tsp vanilla
1 c all purpose flour
1 tsp baking soda
1 tsp cinnamon

Directions:
Directions:
In medium bowl, combine apples, raisins and dates. In large bowl combine eggs, sugar, oil, and vanilla.
In a third bowl , combine flour, baking soda and cinnamon; add to egg mixture. Stir in fruit. Spread in non-stick or lightly greased 9'' x 13'' pan. Bake at 350º F for about 25 minutes or until toothpick comes out clean.
