1 lb bulk sausage
1/4 tsp each pepper and basil
2 tbsp. apple juice concentrate
oil for frying
white flour
1/2 medium apple peeled and chopped
2 c water
1/8 tsp nutmeg
1/8 tsp cinnamon
1/2 c cornmeal

Directions:
Directions:
Put sausage in greased skillet and sprinkle with pepper and basil and brown breaking into small pieces. Remove from pan to paper towels to drain. Add apple juice to pan drippings and bring to a boil. Add onion and apple sprinkling with nutmeg and cinnamon. Cook until onion is soft but not brown. Remove from pan and set with meat to drain. In a saucepan combine water and cornmeal. Boil stirring constantly. Reduce heat and simmer five minutes still stirring often. Add sausage mixture and blend in well. Spoon mixture into a greased loaf pan. Refrigerate for at least one hour. For best results overnight. Unmould loaf and cut into slices about 1/2" thick. Lightly coat with flour and fry in greased skillet until golden brown on both sides. Serve warm.
