3 large leeks
4 Tbsp. olive oil
4 Tbsp. water
1 quart chicken broth
3 large potatoes
salt and pepper

Directions:
Directions:
Clean and chop leeks to ½" size pieces. In large stew pot put 4 Tbsp. olive oil and chopped leeks. Heat leeks on medium heat until soft and glistening, but try not to let many brown. Avoid this by adding water. Peel and cut up potatoes in 2" chunks. Add potatoes to leeks and add broth. Simmer with top on pot until potatoes are cooked and soft. Let mixture cool. Add to blender and purée. Return to stew pot and reheat. Add salt and pepper and hot pepper flakes to taste.
