Filet Steaks in Mushroom & Madeira Sauce Recipe

Ingredients: 4 6 to 12-oz filet steaks, 1 to 1-1/2 inches thick, bacon wrapped, prime or choice at least 4-1/2 T butter 4 crustless rounds of French or Italian-style bread 1/2 lb fresh mushrooms 2 T oil, olive or peanut 2 T minced shallots or green onions 1/2 cup beef bullion 1 T tomato paste 1/3 cup Madira or Marsala, to taste 1/2 T cornstarch 2 T freshly minced parsley

Directions:Saute bread rounds in one tablespoon of butter until lightly golden brown. Saute mushrooms in 1-1/2 tablespoons of butter and 1 tablespoon of oil for 4 minutes, then add shallots and saute for 1 minute more. Dry steaks with a towel.
Saute steaks in 1-1/2 tablespoons of the butter and 1 tablespoon of the oil for 2-5 minutes on each side, to taste. Remove steaks from pan and hold on a warm platter. Discard bacon wrap if you wish.
Pour the fat out of the pan. Add bouillon and tomato paste and cook over high heat to boil down rapidly to 2-3 tablespoons liquid, stirring to scrape up cooking juices. Add Madeira or Marsala and cornstarch and continue to cook over high heat to boil down rapidly for 1 minute. Add mushrooms and cook over low heat for 1 minutes.
Place steaks on bread rounds. Pour sauce over steaks. Sprinkle parsley over sauce. |
