8 large English cucumbers
2 red peppers
3 green peppers
2 lbs onions
½ cup pickling salt
4 cups vinegar
6 cups sugar
1 tbsp turmeric
2 tbsp mustard seed
1 tbsp. celery seed

Directions:
Directions:
Remove seeds from cucumbers (don't peel).

Put all veggies in food processor, chop until chunky, not minced. Then pour veggies into a large pot or container. Add ½ gallon of hot water (64 oz). Then add the pickling salt and let sit over night.

Next day, drain the veggies and put into large stock pot. Add vinegar, sugar, turmeric, mustard seed and celery seed.

Simmer 15 - 20 minutes. Remove some juice from the pot and add cornstarch (2 tbsp.). Mix and put back into the pot to thicken (2 - 3 minutes). When satisfied with consistency you are ready to bottle!
