Ingredients: Sauce 2 Tablespoons olive oil ½ Cup finely chopped onion ½ Cup finely chopped celery 2-3 cloves garlic, minced 15 oz cans tomato sauce (1 can of diced tomatoes if chunky sauce is desired) 6 oz can tomato paste heaping Tablespoon dried oregano heaping Tablespoon dried basil ½ Tablespoon dried thyme bay leaf Ground pepper
Crust 2 ½-3 cups AP flour cup hot water pkg. (1/4 oz) yeast ¼ teaspoon salt Tablespoons olive oil
Toppings: Mozzerella cheese, Parmesan cheese, Italian sausage, pepperoni, sliced onion, green or red peppers, black olives, mushrooms, any other topping desired except ice cream.

Sweat onion and celery in olive oil until translucent. Stir in oregano and half of basil and thyme; add garlic and bay leaf. Cook about 2-3 minutes. Add tomato sauce and stir in tomato paste. Cook slowly for 20-30 minutes until thickened. Adjust seasoning with salt and pepper; add remaining basil.
Crust
In a large bowl, combine 1 ½ cups flour, water, yeast and salt. Mix thoroughly. Add 1 more cup flour and the olive oil. Kneed into a smooth ball, adding flour if needed. Return to oiled bowl and cover, for about 1 hour. Punch down and divide into four portions and return to covered bowl for 15-20 minutes. Form each ball into disk and stretch into four individual 8-10 inch crusts.
The ‘ZAAA Preheat oven and pizza stone to 475°F.
Cover crust with 4-6 Tablespoons sauce, working sauce very close to edge of crust. Add toppings…pepperoni, sausage, olives, onion, peppers…whatever you like. Cover lightly with mozzarella cheese and dust with Parmesan or Romano. Garnish with basil Flour or cornmeal may be used to keep the crust from sticking to the stone.
Bake 10-15 minutes or until cheese is bubbly and crust is golden
Chicago Style Modification Preheat oven to 350°F.
Use 2 dough portions described above, spread into a 9” spring pan. Work dough up the sides a bit to contain toppings. Spread Mozzarella cheese on dough. Add sauce on top of cheese, and add other toppings. Garnish with more Mozzarella and Parmesan, and basil.
Bake 30-40 minutes until bubbly and crust is slightly brown. Allow to cool 3-4 minutes before removing from pan. |
