1 ½ cup water
1 cup uncooked quinoa rinsed
¼ cup red bell pepper, chopped
¼ cup yellow bell pepper, chopped
¼ small red onion, finely chopped
1 ½ tsp. curry powder
¼ cup chopped fresh cilantro
1 lime, juiced
¼ cup toasted sliced almonds
½ cup minced carrots
½ cup dried cranberries ( or ¼ cup cranberries & ¼ cup dried apricots)
I added ¼ pumpkin seeds
salt and pepper to taste

Directions:
Directions:
Bring water to a boil and add quinoa, simmer 15 to 20 minutes until water absorbed. Chill in refrigerator.
Add red, yellow, pepper, red onion, curry powder, cilantro, lime juice, almonds, carrots, cranberries (apricots),
Season to taste with salt and pepper. Chill before serving.
