Strawberry Syrup:

3 C. sliced Strawberries
1/4 C. Sugar
1/2 t. fresh lemon zest, divided
2 T. fresh lemon juice

French Toast:

2 large eggs 12 slices reduced calorie wheat bread
1 C minus 2 T. nonfat milk crust trimmed if desired
1/2 t. vanilla extract 1 C. sliced strawberries
4 ozs. reduced fat cream cheese 2 t. butter
1/4 c fat free ricotta 2 T. canola oil

For syrup:
In medium saucepan, combine the strawberries, the sugar, 1/4 t. of the lemon zest, and the lemon juice. Brint to a boil; reduce heat & simmer, stirring occasionally, til strawberries are soft & the syrup is thickened & reduced by 1/3 in volume, 12 to 15 minutes. Let cool to room tem. Makes about 1 1/4 cups.

French Toast:
In a medium bowl, whisk eggs, milk, & vanilla.

In a small bowl gently combine cream cheese, ricotta, sugar & remaining 1/4 t. lemon zest, just til blended. Spread on 6 bread slices & top with the sliced berries. Top with remaining bread & press around edges to seal.

melt butter on griddle. Dip sandwiches in egg mixture for a few seconds on each side, Place on griddle, cook til golden brown 2 -3 minutes. servce with syrup.
