Sausage Balls #1
1 lb. (16 oz.) sausage, mild or hot - your choice, room temperature
10 oz. sharp cheddar cheese, grated, room temperature
1 tsp. paprika
2-1/2 c. biscuit mix

2 c. biscuit mix
1 lb. (16 oz.) sausage, mild or hot - your choice, room temperature
1/4 lb. (4 oz.) cheddar cheese, grated, room temperature

Directions:
Directions:
Preheat oven to 350º.

Have sausage and grated cheese at room temperature for both recipe variations.

Sausage Balls #1:
In a bowl combine the sausage, grated cheese, paprika and biscuit mix; mix well.
Roll into small balls either by hand or using a small cookie scoop; place on cookie sheet with sides or a baking pan.
Bake in 350º oven for 12-15 minutes.
May be frozen once cooled.

Sausage Balls #2:
In a bowl combine the sausage, grated cheese and biscuit mix; mix well.
Roll into small balls either by hand or using a small cookie scoop; place on cookie sheet with sides or a baking pan.
Bake in 350º oven for 10 minutes.
