1 (3 to 3-1/2 lb) shoulder or chuck roast
2 T red wine vinegar
2 T Worcestershire sauce
2 T soy sauce
1/2 cup catsup
1 tsp minced garlic

Directions:
Directions:
Preheat oven to 350º. Spray nonstick skillet with vegetable spray. Brown all sides of roast over medium-high heat. Transfer beef to roasting pan or place beef in slow cooker on low setting.

Combine vinegar, Worcestshire sauce, soy sauce, catsup and garlic. Pour over roast. Cover and bake in oven approximately 1-1/2 hours for medium rare (150º) or to desired degree of doneness, or cook in slow cooker about 5 hours for medium rare. Cooking time varies between slow cookers; check doneness with meat thermometer.

Slice roast and serve with pan juices, or make a gravy.

To make a gravy, bring juices to a boil. Mix together 1/4 cup water and 2 T flour; slowly add to boiling pan juices, stirring constantly; cook for 2 minutes and serve.
