1 large pineapple
5 large navel oranges
1 c. sugar

Peel pineapple and cut into ¼ inch round slices. Place on parchment-lined cookie sheet or on individual plates. Peel and remove pith from oranges. Cut into round slices. Arrange 3 slices of orange on top of each pineapple slice. In a skillet, cook sugar over medium heat for about 10 minutes, swirling sugar when it begins to melt. Continue cooking until sugar melts completely and becomes a deep amber color. Remove from heat. Drizzle caramelized sugar over each pineapple and orange stack. If you did not put them on individual plates, use a turner to place a stack on each plate. Serve immediately for a crunchy, candy-like topping or cover and refrigerate for about 2 hours for softer, caramel-like topping.
