1 cup butter or margarine
2 cups powdered sugar
4 squares unsweetened chocolate, melted
4 eggs
3/4 teaspoon peppermint flavoring
2 teaspoons vanilla
1 cup vanilla wafers, crushed
12 cupcake liners

Directions:
Directions:
Beat together butter and powdered sugar until light and fluffy. Add melted chocolate and continue to beat. Add eggs and beat again. Add peppermint and vanilla. Sprinkle half of the crumbs in the cupcake liners. Fill with peppermint mixture. Top off with cookies. Freeze until firm and take out of the freezer 15 minutes before serving.

Again, this is another recipe that Mom made that I absolutely loved. She would double and sometimes triple the recipe and keep the extras in the huge chest freezer in the basement of our house. I distinctly remember a mustard colored plastic container that was rectangular in shape that these desserts would be stored in. On more than one occasion, there was a delicate balancing act I performed as my feet both left the floor and I tipped into the freezer to get one or two of these desserts!
