Sauce:
1 T. oil
1 onion, finely chopped
2 (15-ounce) cans tomato sauce
½ c. water
3 T. fresh lemon juice
¼ c. firmly packed dark brown sugar
salt and pepper, to taste

Meatballs:
3 eggs, lightly beaten
2 large potatoes, peeled and grated
1 onion, grated
2 ½ t. salt
½ t. black pepper
2 pounds ground meat (this works best with combo of 1 lb. beef and 1 lb. dark turkey but it's ok to use all beef)

For the sauce, heat oil in a large 5-quart pot over medium heat. Add onion and sauce until tender, 10 minutes. Add tomato sauce, reserving ½ c. to use to season the meatball mixture. Add water, lemon juice and brown sugar. Let simmer for 5 minutes. Cover and remove from heat.
Form the meatballs. Combine eggs, potatoes, onions, salt, pepper and reserved ½ c. tomato sauce. Combine egg mixture and meat until thoroughly mixed ( mix the other ing. first so you have to work the meat less, resulting in more tender meatballs). With damp hands, roll meatballs. Bring sauce to a simmer. Add meatballs to sauce. They do not have to be covered entirely. Cover, lower heat and cook for 15 minutes, gently stirring. Cook an additional 15 minutes. Taste and season with salt and pepper if needed( or more brown sugar or lemon juice if sweetness or tartness needs adjusting).
