3 EGGS--BEAT 3 MIN AT HIGH SPEED IN MIXER, SLOWLY ADD
1 C SUGAR, 1 TBSP LEMON JUICE, 2/3 C PUMPKIN


MIX 3/4 C FLOUR
1 TSP BAKING POWDER
1 TSP GINGER
2 TSP CINNAMON
1/2 TSP NUTMEG
1/2 TSP SALT

MIX DRY INGREDIENTS INTO LIQUID UNTIL MIXED WELL..

SPREAD IN LINED JELLY ROLL PAN /WAX PAPER
TOP WITH 1 C FINELY CHOPPED PECANS. BAKE AT 375 FOR 15 MIN

ROLL OUT ON TEA TOWEL COVERED WITH POWERED SUGAR, THEN PEEL OFF WAX PAPER AND ROLL UP AND PLACE IN REFRIG
 

FILLING

8 OZ CREAM CHEESE SOFTENED
1/2 TSP VANILLA
