2 tsp olive oil
11/2 c onions, chopped
1 c each celery and carrots, chopped
2 tsp garlic, minced
1 tbsp. thyme, fresh or 1 tsp dried
1 tbsp. oregano, dried
7 c chicken broth, sodium reduced
1 meaty smoked ham shank
1 c dry lentils, rinsed
1 c dry green split peas, rinsed
1/2 tsp pepper
1 tbsp. balsamic vinegar
salt to taste

Directions:
Directions:
Heat olive oil in a large pot over medium heat. Add onions, celery, carrots, and garlic. Cook and stir until vegetables begin to soften, about 6 minutes. Add Thyme and Oregano and cook 1 minute more.
Add remaining ingredients, except vinegar and salt. Bring to a boil. Reduce heat to low. Cover and simmer for 1 hour.

Remove ham shank from soup. Use hand blender to puree soup. Careful!! might splatter. Cut meat from ham shank and put in soup. Put in vinegar. Add saslt and pepper to taste.
