3 lbs. red potatoes, quartered
2 pkgs. cream cheese, cubed
1/2 c. butter, cubed
1/2 c. half & half
1 med. green bell pepper, chopped
1 med. red bell pepper, chopped
4 green onions, chopped
1 jar pimentos
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. cheddar cheese, shredded
1/2 c. Parmesan cheese, divided

Directions:
Directions:
Place potatoes in a large pot of boiling water and cook for 12 - 15 minutes or until tender and drain. In a large mixing bowl, mash the potatoes, add cream cheese, butter and half and half, beat until blended. Stir in green and red bell peppers, onions, pimentos, salt and pepper. Sir in 1/3 c. cheddar cheese and Parmesan cheese. Transfer to a greased 11X7X2 baking dish. Sprinkle with remaining cheese. Bake uncovered @ 350 for 20 - 25 minutes until heated.
