3 tbsp. apple cider vinegar 2 tbsp. white sugar 1 tbsp. olive oil 1 tbsp. water 1 pinch salt and ground black pepper 1 15.25 oz can sweet corn, drained 1/2 c. chopped green bell pepper 1/2 c. chopped red bell pepper 1/3 c. chopped sweet onion 1 small tomato, chopped
Wisk together the apple cider vinegar, sugar, olive oil, water, salt and pepper in a large bowl. Add the corn, green and red bell peppers, onion and tomato and lightly toss. Cover and refrigerate until ready to serve.
