8 slices bacon
4 green onions, thinly sliced
8 eggs
1 cup milk
1/2 teaspoon salt
2 1/2 cups shredded Monterey Jack cheese (Swiss or Cheddar may be substituted)

Directions:
Directions:
Preheat oven to 350º

Fry bacon until crisp; drain and coarsely chop.
Reserve small amount of grease and sauté onions until limp.

Beat eggs with milk and salt. Stir in bacon, onions and 2 cups of cheese. Pour into greased, shallow 2 quart baking dish.

Bake at 350º for 35-40 minutes, or until mixture is set and top is lightly browned.

Sprinkle with remaining cheese. Return to oven until cheese melts. Serve immediately.
