"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
2 1/2 c. flour
1 tsp. salt
1 c. shortening
1 egg yolk
Milk
1 c. cornflakes
8 c. tart baking apples, peeled, cored and sliced
1/2 c. sugar
1 tsp. cinnamon
1 egg white
1 T. water

Directions:
Directions:
For pastry dough, stir together the flour and salt. Using a pastry blender, cut in shortening until mixture resembles coarse crumbs. Lightly beat egg yolk in a measuring cup. Add enough milk to egg yolk to make 2/3 cup total liquid; mix well. Stir egg yolk mixture into flour mixture, mix well. Divide dough in half.
On a lightly floured surface, roll half of the dough to an 18 x 12 rectangle. To transfer pastry, wrap it around the roling pin; unroll into an ungreased 15 x 10 x 1 inch baking pan. (Pastry will hang over edges of pan) Sprinkle pastry in pan with cornflakes; top with apples. In a small bowl, combine sugar and cinnamon; sprinkle over apples. Roll remaining dough to a 16 x 12 inch rectangle; place over apples. Seal edges, cut slits in top for steam to escape. In a small bowl, beat egg white and the water; brush onto pastry.
Bake at 375º for about 50 minutes or until golden brown. Cool in pan or a wire rack. If desired frost with a powdered sugar glaze or dust with powdered sugar.
