1 lb. dried white beans
6 C. chicken stock
4 small onions, peeled and diced
1 T. minced garlic
2 1/2 lbs. shredded chicken
2 T. oil
6 Anaheim chiles, seeded and diced
2 T. cumin
1 T. oregano
Scant tsp. cayenne
Scant 1/2 tsp. ground cloves

Jack cheese, sour cream, cilantro for garnish

Directions:
Directions:
Rinse beans and put them into a heavy pot with broth, half of the onions, and the garlic. Boil until very tender (2-3 hours, less if the beans were soaked overnight). Bake the chicken until just done, shred it and set aside. In a saute pan, heat the oil and saute the remaining onion, chiles and seasonings until the onions are softened. Add the onions and chiles to the beans. Add chicken and check seasoning. Serve with tortillas, chips, jack cheese, sour cream or cilantro!

This is a hearty soup and you can do any number of fun toppings/garnishes. Or you can serve in individual, heat-proof dishes with a generous amount of cheese that has been well-browned under the broiler!
