1 small onion, sliced thin
2 teaspoons butter
1/3 cup mango chutney (available in most grocery stores)
1/2 teaspoon snipped fresh rosemary (use fresh...it is so much better)
1/8 teaspoon crushed red pepper
1 8 ounce round of Brie (approximately 4 inches in diameter) MUST be round
Assorted crackers or toasted french bread

FOR THE CARMELIZED ONIONS: Add sliced onions to hot butter in a small saucepan. Cover and cook over low heat about 15 minutes until golden and caramelized, stirring occasionally.

Meanwhile, stir together chutney (cut up any big chunks), crushed red pepper flakes, and rosemary.

Cut a thin slice fro the top of the Brie round to remove the rind, discard. Place the Brie in an ungreased 9 inch pie plate. Top with the mango chutney mixture first, then add the caramelized onions on top.

Bake uncovered in a 325º oven for 10-15 minutes or until the Brie is soft and warm, but not runny.

Served with toasted bread or crackers.

This recipe is from a 20 year old appetizer magazine. It is a favorite of my Stepdaughter Jamie. Warm and gooey, fantastic! Recipe can be doubled if you use a larger round of Brie.
