6 cups diced rhubarb
1 1/2 cups sugar
1 cup all purpose flour
1 teaspoon cinnamon
1/8 teaspoon salt
1/2 stick chilled butter
2 tablespoons water

Directions:
Directions:
Mix rhubarb, 1 cup of the sugar and 2 tablespoons of water together. Put in a shallow baking dish. Mix flour, remaining sugar, cinnamon and salt. Cut in the butter and sprinkle over the rhubarb. Bake at 350º for 50 minutes or until the top is crusty brown.

Serve with a scoop of vanilla ice cream...or not. Delicious!

My Mother's dear friend, Pyhl Rudnick, would bring this crunchy warm dessert over when we were kids in the Midwest. It is great refrigerated for the next day, also!
