1/3 cup olive oil
3 garlic cloves, chopped
1 large onion, thinly sliced
2 zucchini, well scrubbed and sliced
1 small eggplant, peeled and cubed
3 tbsp. flour
2 green peppers, seeded and cut into strips
5 ripe tomatoes, peeled and sliced
Salt and pepper to taste
1 tbsp. capers

Heat the oil in a large skillet, add the garlic and onion and saute' until onion is transparent.
Dust the squash and eggplant lightly with flour
Add the squash, eggplant and green peppers to the skillet, cover and cook slowly, about an hour.
Add the tomatoes and simmer, uncovered, until the mixture thickens some. Season with the salt and pepper.
Add the capers during the last 15 minutes of cooking. Serve hot or cold
